I made wonderful stuffed tomatoes for lunch. Large beefsteak tomatoes for structure. Stuffed them with sauteed onions, pork, chevre and dill.

Cook the onions first.
Grind the pork and sauté with garlic.
Mix cheese, onion and pork.
Stuff into hollow tomatoes.

Top with cheese and set under broiler fir about 5 min. We then enjoyed them with a local Pinot Noir. :D

Tonight? Well... I found some delicious morels and will serve them in a light vermouth and garlic reduction over baked chicken breast.

I'm going to sauté them in bacon fat.
Yes. Bacon fat.

I'm jealous of your food. Did you find sugar free bacon somewhere? (I say hoping not to rain on your bacon fiesta.)

No, just ignoring that for now. i was gifted bacon at work for a gag gift.

I'm down 4 pounds from my last set of consistent weigh-ins.

It is dwindling. :) Three days ago was HARD. Yesterday, easier. Today? No trouble. But I'm distracting myself with goat cheese in my lunch.

Also I tried a little agave nectar in my coffee which is surprisingly good.

Thank flying spagetti monster for agave nectar. I remember the first week with no sugar, it was a sad sad week of trying to avoid the urge to hide in a corner and eat all the bakery at Barriques.

Stay out of the bakery eating corner!

Think happy thoughts: bacon, beet tortes, and Sauvignon blancs that don't taste like grass.

Have you tried the Evil cabernet? The first cabernet I've loved.
Also? Sauvignon can go to hell. Grass or no.

Their Pinot Noir was blah but I'll have to check out cab.

Fine, I fail at happy thought giving. I'm much better at in person distractions. Stupid sauvignon blancs.

Cooking with bacon fat is amazing. It is an excellent base for many sauces. Even if the sauce doesn't call for bacon pieces, you can make it anyway, use the grease, and then eat your bacon separately.

I'm more trying to flavor the mushrooms lightly. The sauce is going to be hard, though, without flour. :/
