1 3/4 cups AP flour.
1 teaspoon baking soda.
1/2(ish) teaspoon salt.
2 large eggs.
1 cup sugar.
3 bananas mashed.
1/2 cup peanut butter.
Mix first three ingredients in a bowl. Set aside.
Cream butter and sugar until fluffy. Slowly incorporate eggs.
Mix bananas and peanut butter. Add honey as desired. Add bananas to egg goo and mix. Add dry ingredients to wet and mix until just brought together. Since it's a quick bread, do NOT over mix or it will be chewy and tough to eat.
Bake for 55ish minutes at 350.
I haven't tried it yet. I'm vaguely concerned because I randomly added salted, natural peanut butter to the mix. Hopefully the tablespoon of honey I added will sweeten it as will the extra sugar (usually you use 1/3 a cup less on these recipes.
It certainly smells lovely.
Edit: Oh man. It's really, really good. I'm glad I added the honey. It is a brighter sweetness than sugar alone. And the peanut butter adds such a nice hearty heft to the bananas.
