BACON

I made wonderful stuffed tomatoes for lunch. Large beefsteak tomatoes for structure. Stuffed them with sauteed onions, pork, chevre and dill.

Cook the onions first.
Grind the pork and sauté with garlic.
Mix cheese, onion and pork.
Stuff into hollow tomatoes.

Top with cheese and set under broiler fir about 5 min. We then enjoyed them with a local Pinot Noir. :D

Tonight? Well... I found some delicious morels and will serve them in a light vermouth and garlic reduction over baked chicken breast.

I'm going to sauté them in bacon fat.
Yes. Bacon fat.
